Recommended dosage:
For saturated/dark colours, 1-3g of dye per 1kg of product.
For pastel colours, 0.01 – 0.5g of dye per 1kg of product.
The maximum permissible dosage is 5g per 100g of the product.
Storage:
Store in a dark, dry place at a temperature of no higher than 22°C and a relative humidity of no more than 70%.
Application:
Marshmallow:
It is better to add the dye to the marshmallow mass while whipping the mass, so that it dissolves well.
Drinks:
It is better to add the dye to a cool or room temperature liquid.
Cream:
The dye can be added to any cream that contains moisture, for example, cream cheese, on cream/butter, ganache with cream cheese, custards. For delicate colours, we recommend adding the dye to a small amount of cream, 10-20g, mix well, and then add the coloured mass a little at a time to the white base. For more saturated colours, we recommend adding the dye to the cream, and leaving the mass at room temperature for 15-20 minutes.
Sponges:
It is better to use a water-soluble dye, as it will give more pigmentation with a smaller amount of dye. The dye does not burn out in the oven if the temperature is not higher than 170°C.
